This is the result of the fifth time I’ve made Levain. It was absolutely delicious, and turned out just about perfect in every way that matters. I was really pleased with the results. I’m not sure if I need to make it again tonight so that I can make it again on Friday for Saturday night, but I probably will. So dinner on SAturday will have iteration #6 or #7 of this yeast culture.
It’ll be great.
