and I (and a number of other folks) are doing summer diets. So I figured I’d help out by taking photos of a couple of my favorite recipes and posting them online. Help out, and add your own to the mix. Use Flickr or some other photo-sharing site to post the results!
Caprese Salad
This salad is really easy to make. This feeds me by myself with no other dishes, or it feeds 3-4 as a side dish. Add more mozarella or tomatoes as needed to expand the dish.
Ingredients
2 tomatoes
handful of mint leaves (or basil)
1/4 of a mozarella ball
salt
pepper
olive oil
Process
1. use a knife to core the tomatoes. Then slice them thinly.
2. Slice the mozarella into thin strips and intersperse with the tomatoes.
3. Drizzle olive oil over the tomatoes and mozarella.
4. Season with salt and pepper to taste.
5. Garnish with oregano or other Italian spices to taste.
Mmmm…protein…Now I’m hungry and heading off to 10 days of college food. Wish me good cafeteria staff.
One other thought–this works extra quick and easy with grape tomatoes sliced in half.

The trouble is that BV is loaded with sugar.
Is Balsalmic Vinegar allowed on your current eating plan? Cuz this with a drizzle of BV would just be… fantabulous.
My current diet is no-flour and no-sugar. So bacon doesn’t defeat the diet part at all, but adds the joy of protein. It’s good.
I do something like this, except I usually throw in a little rice wine vinegar and some oil-cured olives, occasionally hearts-of-palm and/or artichoke hearts. And often bacon, but that kind of defeats the diet part…
